Baked Chicken

Time 1 hour 15 minutes

Ingredients
1 fryer chicken - around 3 pounds
Salt and pepper to taste
2 tbsp margarine
1/8 tsp thyme
3 oz Carolinas Sweet Heat BBQ Sauce

Directions
Place Chicken in baking dish. Sprinkle with salt and pepper. Cover with Sweet Heat BBQ Sauce and with little pieces of margarine. Let bake 1 hour and 15 minutes.


Short Ribs of Beef

Cooking Time 1 hour 10 minutes

Ingredients
2 lbs meaty beef chuck short ribs
1 onion sliced
4 potatoes peeled and cust
4 carrots sliced
1/2 tsp salt
1/2 cup Carolinas Sweet Heat BBQ Sauce

Directions
Arrange ribs bone side up in a 3 quart casserole. Arrange onion over ribs. Arrange potatoes and carrots around ribs. Sprinkle with salt, pour Sweet Heat BBQ Sauce over ribs and vegetables. Cook 1 hour and 10 minutes at 300 degrees. Ready to serve.


Tenderloin of Beef Supreme

Cooking time 1 hour and 30 minutes

Ingredients
1 beef tenderloin roast 2 1/2 lbs
3 tbsp of minced onion
2 tbsp of orange peel grated
1/2 lbs mushrooms sliced
1/2 cup Carolinas Table Sauce

Directions
Place tenderloin roast in 3 quart casserole dish. Sprinkle minced onions and orange peels over roast. Slice mushrooms over top of roast, top with Carolinas Table Sauce. Cook for 1 ½ hour at 300 degrees.


Roasted Duckling

Cooking Time 1 3/4 hours

Ingredients
1 duckling 4 lbs giblets removed
Salt and Pepper to taste
Carolinas Sweet Heat BBQ Sauce to taste

Directions
Rinse duckling in cold water, pat dry. Pierce skin all over to allow fat to drain. Place duckling breast side up in baking dish. Brush on Carolinas Sweet Heat BBQ Sauce. Duckling is ready to bake at 325 degrees 1 hour 45 minutes.


Heavenly Cornish Hens

Cooking Time 85 minutes

Ingredients
2 Cornish hens 1 1/2 lbs each
3 tbsp Carolinas Table Sauce
2 tbsp honey
2 tbsp brown sugar

Directions
Split hens length-wise. Rinse hens in cool water and pat dry. Mix Carolinas Table Sauce, honey and brown sugar together. Brush mixture all over hens, place in dish and bake 85 minutes until golden brown.


Fish Fillets

Cooking Time 30 minutes

Ingredients
1 pound fish fillets 1/2 inch thick
Carolinas Table Sauce to taste
Lemon Juice to taste
Salt and Pepper to taste

Directions
Arrange fillets in round or oval dish with thickets parts turned outside of dish. Then brush well with Carolinas Table Sauce. Top with lemon juice. Salt and pepper to taste. Bake at 325 degrees for 30 minutes.


Fish Steak

Cooking Time 35 minutes

Ingredients
2 Halibut Steaks 1/2 pound each, 1 inch thick
2 tbsp butter melted
2 tsp lemon juice
1/2 tsp Dill Weed (optional)
2 tbsp Carolinas Table Sauce

Directions
Arrange fish in a round dish with thickest part up. Combine butter, lemon juice and Carolinas Table Sauce. Brush over fish, sprinkle with Dill Weed. Cook 35 minutes.


Grilled Swordfish Steaks

Cooking Time 25 minutes

Ingredients
4 Swordfish Steaks 1/2 lbs Each
1 tbsp vegetable oil
1 tsp lemon pepper
3 tbsp Carolinas Table Sauce

Directions
Mix vegetable oil, lemon pepper and Carolinas Table Sauce together. Brush on each side of Swordfish Steaks, place in dish and cook for 25 minutes.


Vegetable Soup

2 hours cooking time

Ingredients
2 lbs. Beef stew in 1 1/2 cubes
1 1/2 teaspoons salt
3 oz. Carolinas Table Sauce
4 cups water
3 cups celery chopped
3 cups carrots cut
3 cups white potatoes cubed
1 cup onions chopped

Directions
Arrange beef in 3 quart pot, cook one hour. Sprinkle with salt, add Carolinas Table Sauce and cook until almost done. Then add all the vegetables. Cook for one more hour then soup will be ready to serve.

Carolinas Table Sauce Meat Loaf

Ingredients
1 can (8 oz) tomato sauce
1/4 firmly packed brown sugar
1 teaspoon prepared mustard
2 lbs. Lean ground beef
1/4 cup cracker crumbs
2 large eggs
1 medium onion minced
1 1/2 teaspoon salt
1/4 teaspoon pepper
3 oz. Carolinas Table Sauce
1 cup catsup

Directions
Combine all ingredients. Top meat loaf with Carolinas Table Sauce and catsup. Cook for one hour. Ready to serve.


Barbecued Beef on a Bun

Cook 3 pounds beef cut in chunks (cook 2 hours)

Ingredients
6 oz. Carolinas Sweet Heat BBQ Sauce
4 tablespoons parsley flakes
4 tablespoons onion flakes

Directions
When beef has cooked, take all ingredients and beef and mix well. Place on hot buns. Ready to serve. Use with side dish of soup.


Peppered Steak

Cooking Time 45 minutes

Ingredients
1 top round steak, 1 1/2 pounds, ½ inch thick
1 tablespoon vegetable oil
1 clove garlic minced
2 teaspoons corn starch
2 tablespoons Soy Sauce
2 green peppers cut into 1 inch cubes (2 cups)
1 thinly sliced onion
2 large stalks of celery sliced
1 cup water
1 jar chopped pimentos drained
1 1/2 teaspoon salt
1/2 teaspoon pepper
3 oz. Carolinas Table Sauce

Directions
Cut steak into ¼ inch strips, set aside. Pour oil in 2 quart casserole, place in oven to heat. Put steak in oil and let cook for 20 minutes, stirring 2-3 times. Then take casserole and all other ingredients and cook 25 minutes more. Pepper Steak will be ready to serve.

Sweet Heat Bloody Mary Mix

Use your favorite homemade or prepared Tomato Juice, V-8 Blend, or Bloody Mary Mix and taste to adjust seasonings accordingly.

Ingredients
4 quarts Tomato Juice
1/2 cup Sweet Heat BBQ Sauce

Additional Flavor Suggestions:
Prepared Horseradish Sauce ( 2 tsp.), Limes Halved and Juiced - 2 to 3 (reserve halves and add to Serving Pitcher after chilling.

Salt, Pepper, Your favorite Seasoning or House Blend.

1 cup Vodka ( Pepper flavored for extra bite)

Directions
Mix first 2 ingredients and add the remaining flavorings to taste. Taste before and after chilling and adjust accordingly.

Carolinas SunSHINE Omelet

Ingredients
4 Eggs
3 tsp Carolinas Shine Hot Sauce (or to taste)
1/2 cup Green Pepper – Diced
1/2 cup Red Pepper – Diced
1/2 cup Chopped Onions
1/2 cup Chopped Ham or Sausage
1/2 cup Monterey Jack or Cheddar Cheese

Directions
Beat eggs and pour into a non-stick pan, cook over medium to set the eggs, then add the remaining ingredients in order above. Cook until cheese is melted. Be careful not to brown or overcook.
